What’s on the Tucson Feeds Paris Menu?

What does Parma, Italy; Phuket, Thailand; Bergen, Norway; and Tucson, Arizona have in common?

Along with a dozen other cities scattered across the global scape, they all have been chosen as World Cities of Gastronomy by UNESCO, a United Nations Educational, Scientific and Cultural Organization.

Tucson is the first U.S. city to be chosen which is a double honor.

UNESCO invited Tucson to the 2017 UNESCO Creative Cities Network’s annual conference on June 28th at the U.S. Embassy in Paris to present tastes of our town. Who better than Janos Wilder, our James Beard Award winning chef to prepare the meal and wow the attendees. During the event, a photographic slide show of Tucson’s food history and gastronomy will be projected.

Chef-created bocaditos, “little bites,” will highlight Tucson City of Gastronomy flavors. Some will include ingredients from Tucson that have been grown here for more than 4,000 years, as well as even older traditionally foraged foods like cholla buds, saguaro blossom syrup, and prickly pear juice. At several action stations, guests will be able to watch bocaditos being made to order by Chef Wilder and chefs from the U.S. Embassy, and hear explanations of the cultural significance of the traditional ingredients.
